Behind The Scenes of Our Organic Cafe | Episode 138

by | Jan 27, 2023 | The Health Made Simple Show

Eating a clean, organic diet has never been more popular than in 2023.

Almost every grocery store now contains an “organic” section at the grocery store or a health food section. Shopping there guarantees a clean diet, right?

Not quite…

This week on the Health Made Simple show, we welcome special guest (and organic food expert) Kelly Precourt!

After spearheading the opening of Prema (a sanskrit word for “Love”), the Balance Health Studio’s organic cafe, she quickly came to realize how difficult finding true organic foods really is. At first, they thought it would be easy. But then, they quickly realized that it was a larger undertaking than what they thought.

When the Precourt family cook for themselves at home, they cook for nutrition (not taste) first. Having this mindset about diet took a long time to refine, and cooking for the public and creating recipes that everyone likes (and are kid friendly!) is harder than it looks. Convincing the public that zucchinis belong in their smoothies, for example, is harder than it looks.

The Prema mantra is not only to provide tasty, organic foods, but they need to fuel the body.

Eating organic

As a whole, consumers are becoming increasingly aware about the importance of eating organic foods. Pesticides, GMO, and modified foods are simply not good for the human body, but eating 100% organically “clean” is not easy. As a busy business owner getting Prema off the ground, Kelly quickly realized sourcing organic foods is NOT an easy task. It is important to keep the trust of your customers with what you are using in the foods you are serving and the products you endorse. Chicken, for example, was a very difficult food to source for the Prema cafe. Kelly had to do some serious research, eventually contacting the chicken farm itself to fully understand what the chickens were being fed. If the chickens are consuming GMO-affected feed or are exposed to other chemicals, it was not good enough for Prema. This, at times, makes for some supply chain issues, when there are so few suppliers that are fully committed to providing these 100% clean products.

Prema also pays close attention to the packaging food is served in. Smoothies for example, are served in glass bottles (not plastic). While it is a much more expensive decision that takes a toll on the business’ bottom line, these are the details that need to be considered when you are committed to providing fully clean, toxin-free food choices.

Formulas

To ensure you’re giving your body everything it needs, sometimes you need to get a little creative with your routine. Did you know you can even add superfoods to a latte? Prema proves that it is possible! Mushrooms, collagen, and ashwagandha, and MCT oil are all healthy additions that you will find in the everyday foods present in your daily ritual (ie your coffee) and increase the benefits you receive from consuming these foods.

“Greenwashing” is when a company appears that they are clean-friendly, but apart from a few highlighted products, they are sneaking unhealthy foods on their shelves (i.e. products that contain artificial sweeteners, canola oil, soy, or gluten ingredients).

Cold-pressed juicing is a great example of a green-washed, current diet “fad” that tricks consumers about what eating clean and nutritiously really means. Mainstream juices found in grocery stores use HPP (high-pressure pasteurization) in their manufacturing processes because it increases shelf life to 3+ months. But this process strips the nutrients and good bacteria you want to be consuming. Because of this, Prema takes the time to make all of their own juices in-house in comparison, and have a 3-4 day refrigerated shelf life. While these processes may be more time consuming, it is necessary in order to stay committed to the Prema 100% clean promise.

What would you be surprised to hear Prema does NOT carry?

Oat milk: While it has become increasingly popular, oat and almond milk does not contain the oil milk needs to make your latte frothy. To account for this, oat milk suppliers ADD canola oil to the product, sneakily ruining the health content. Cashew or coconut milk are much better alternatives to consider.

Plastics of any kind: ANYTHING you consume out of plastic containers are injecting toxic chemicals into your body, and promoting hormone imbalance. Use glass containers or metal water bottles 100% of the time.

Any ingredients containing dairy, gluten, or refined sugar: The team at the Prema cafe is taking the time to create every ingredient from scratch (like the tasty avocado mayonnaise found in the iconic chicken salad recipe).
